Red Rock Debuts Striking Color, Flavor

Cheesemaker Chris Roelli of Roelli Cheese Haus took the cheese world by storm with Dunbarton Blue, an open-air-cured white Cheddar spiked with blue veins. Now he has introduced Red Rock, created as “Dunbarton’s little cousin,” but with its own unique characteristics. Red Rock is made with a double batch of annatto, giving it a deep orange, almost red color in honor of the red stone found in Shullsburg, Wis., where the cheese is made. The cheese is hand-pierced to allow the blue mold to grow, and then cellar-aged for three to six months. Red Rock has a creamy texture and pronounced Blue flavor. - Available in 5-lb. loaves
