Meister Cheese introduces Eagle Cave Reserve, a special bandaged Cheddar made with milk produced on family farms in Southwest Wisconsin’s unglaciated region. Once formed, the Cheddar truckles are coated with lard and cheesecloth and placed in the aging cave for nine to 12 months. The Cheddar has a rich, nutty and earthy flavor with buttery caramel notes.
Serve with dried pears or apples for a pleasing pairing and beautiful presentation. Medium fruity reds and American craft ales also complement the cheese.
